Poulet de Normande

Perfect for a luncheon or with a salad for a family dinner with leftovers!

NOTE: Begin this recipe the night before or early in the morning.

3 cups chopped cooked chicken

1 (8 ounce) package herb-seasoned stuffing mix (Pepperidge Farm works well)

1 bunch green onions, chopped

½ cup celery, chopped

1 ½ cups milk

1 cup chicken broth

½ cups mayonnaise

½ cup (1 stick) butter, melted

2 eggs, lightly beaten

½ teaspoon salt

1 (10 ounce) can cream of mushroom soup

1 cup (4 ounces) shredded Cheddar cheese

Mix the chicken, stuffing mix, green onions, and celery in a large bowl. Stir in the milk, broth, mayonnaise, butter, eggs and salt. Spoon into a 9 X 13 inch glass baking dish sprayed with nonstick spray. Spread the soup over the top and sprinkle with cheese. Chill, covered, for at least 8 hours or overnight. Bake at 325 degrees for 45 minutes, let stand 10 minutes before serving. This dish freezes well once assembled.
